Lemon Dijon Salad Dressing

Store-bought salad dressings are often loaded with inexplicable ingredients: sugar, salt, and unpronounceable preservatives we expect, but they also contain things like soy, wheat, and chemical emulsifiers, which we could all do without.

Lemon Dijon Salad Dressing


  • 1 large egg

  • 1 Tbsp Dijon mustard, gluten-free

  • 1/4 Himalayan sea salt

  • 1/2 tsp black pepper

  • 4 Tbsp of fresh lemon juice

  • 1 1/2 tsp finely chopped lemon peel

  • 1/4 cup extra-virgin olive oil


  1. Place egg yolk, mustard, salt, peper, lemon juice, and lemon peel in a blend (or food processor); cover. Blend until smooth.

  2. Slowly add oil, blending continuously until well blended
